What's for lunch? Zucchini noodles and chicken salad!

Yeah, I know that no one really cares what I eat for lunch.  Well, maybe a few do because people often ask me what I eat.  So here was today's lunch....


This was so yummy!  On the left is zucchini noodles that I boiled a little and then added just a tiny bit of olive oil to continue frying them.  I just put spray butter and Trader Joe's chili lime seasoning on them and they were so delicious!  And we had some leftover rotisserie chicken left in the fridge so I cut that up with some onion, red grapes and a little Light Hellmann's mayo and it was really good!  I had already eaten half of the chicken salad in the pic so there was more of it!

Zucchini noodles: 0 points
Olive oil (1/2 tablespoon):  2 points
Seasoning:  0 points
Chicken:  2 points
Grapes: 0 points
Onions:  0 points
light mayo (2 tbsp--might have actually been less): 2 points

Who knew??

Tried something new today and found it DELICIOUS!!  They've been in my freezer for a while but I hadn't gotten around to trying them--Wegmans Meatless Chicken Nuggets & Trader Joe's Cauliflower and Broccoli Patties.  Since we are snowed in I felt like turning on the oven and I'm glad I did!  I was surprised at how good this is!  I would definitely recommend both of them.

For those following Weight Watchers, the nuggets are 3 Smart Points for 7 nuggets!  And the veggie patties are 3 Smart Points for 2 patties.  And I felt like I was having something bad!  Will definitely be buying these again.

Restaurant Tip: Chili's

Today I had lunch at Chili's with my mom and Evan.  Since I am always looking for healthy options at restaurants I thought I would share...

Chili's Spicy Pasilla Chile Chicken


This was what I had for lunch:  Spicy Pasilla Chile Chicken.  410 calories and 10 Smartpoints.

Menu description:  Grilled chicken breast topped with a smoky pasilla-honey chile sauce and house-made corn & black bean salsa. Served with warm quinoa & wheatberry blend and steamed broccoli.

The chicken was great.  The quinoa & wheatberry blend was ok....not as good as rice but a decent and healthy substitute.  I love when restaurants give nutrition information.  :)

I also had a cup of Southwest Chicken soup that was delicious and just 3 Smartpoints.

Delicious lunch for just 13 Smartpoints.  :)

Healthy Party Snacks!

Last night I was having a "Wine Glass Painting Party" at my house.  Usually when I have a party I make all sorts of dips and chips, cheese and crackers, all sorts of bad (but delicious!) snacks.  I was worried about it because I didn't want to be tempted by all of the badness!  To my surprise I did mostly healthy snacks and didn't feel like I was missing the junk!

I did a fresh fruit tray, a veggie tray (with both regular and fat free dips), organic corn chips & fresh salsa.....and then a few bad cookies/brownies so that those who aren't watching what they eat don't revolt and never come back to my house again!

It was great....I could snack all night and consume barely any points!  The fruit and veggies were all ZERO points, the salsa was also point-free, and the corn chips weren't too bad either.  I stayed away from the cookies and brownies and apparently most of the others did too as they are still sitting here on my kitchen counter!  I am hoping my kids eat them up QUICKLY as they are calling my name...

And I couldn't go through the night without my wine.  I had 1 glass (5 points) but then the other couple I just put a little bit of wine in them (maybe like 1 point worth) and then added some diet 7 UP so that I had a big glass of wine with barely any points!  No, it wasn't quite the same but I still enjoyed drinking wine with my friends and not getting fatter!!

The party was fun too!  We painted pottery wine glasses--a fun night with some of my favorite girls!    I think there was like 15 of us.  Wish we had gotten a group pic before some had left.  :(  Here's a few pics...

Riced Cauliflower

Whoever came up with this idea is a genius!  Such a simple (and obvious!) idea but genius nonetheless!


If you have a Trader Joe's near you, run out and get this stuff!  Though that is actually easier said than done....it's almost always out of stock and people line up when the stores open to get it!  We had to call and have them save some for us when the shipment came in and even then they are putting limits on how much you can get because everyone (at least everyone on Weight Watchers!) wants it!

So basically it's just cauliflower that has been made into little pieces the size of rice.  You can eat it by itself or use it in place of rice--like with Chinese food or a stir fry.  You can use it in soup to take the place of pasta.  Lots of uses!  The best part?  ZERO SMART POINTS!!!

This stuff kept me under points after having a terribly unhealthy lunch that used up most of my points for the day.  Phew!  I was out at a luncheon and there was no choice of what to eat.  It was all high point stuff--a basket of cornbread, muffins and rolls, pot roast with gravy, chicken and biscuits, potatoes, veggies and fresh berry shortcake.  Yikes!  I did the best I could but I was hungry so I had to eat something.  I ate a little bit of everything and just figured out the points as best as I could.  I only ate the fresh berries off of the shortcake and someone else just wanted the cake so we traded and I took her berries and gave her my cake!  Why do I still feel guilty when I eat bad stuff even when I don't go over my points??  Hmmm...
